Chicken Luau



When we were in Hawaii, we went to a luau and they had awesome food. One of the items they had was called "chicken luau", it was chicken cooked with taro leaves and coconut milk. Sadly, it's very hard to find, actually impossible to find taro leaves in the mainland. I substituted the taro leaves with spinach. It turned out really well.



Ingredients:

A few chicken thighs(boneless), about one per person eating

1 tablespoon vegetable oil

1 teaspoon salt

3 pounds of spinach(sounds like a lot, but spinach cooks down a lot)

2 tablespoons of butter

1 cup of coconut milk

Directions:

1) Heat vegetable oil in a pan.

2) Add chicken thighs and brown lightly, turning frequently.

3) Add enough water to cover the chicken, and simmer for about 30 minutes. After 30 minutes, discard of the water.

4) Heat 2 tablespoons of butter in the pan, add the chicken.

5) Season with salt, add the spinach and 1 cup of coconut milk, simmer about 5 to 10 minutes and then serve!
